Today I’ve decided to cook something that brings me back to my childhood. This dish doesn’t really have a name but it tastes soooooooooo good, my mum used to cook this for me when I was kid and I absolutely loved it.
- 6 green bananas
- 2 onions
- 3 tomatoes
- 2 cloves of garlic
- 1 small piece of ginger
- tomato purée
- chicken portions or any meat you like
- 2 red bell peppers
- 2 cubes of maggi
- 4 cubes of knorr stock cubes in chicken/ vegetable flavour
- garlic powder
- 2 scotch bonnet peppers
put the chicken and all the vegetables in a pot and cook for 30 minutes, then take all the vegetables out of the chicken broth and blend into a smooth consistency.
add the blended vegetables back into the chicken and add the tomato purée.
cut the bananas into three equal pieces and and peal the skin off and add to the mixture add the scotch bonnet peppers and the stock cubes and garlic powder, then let this simmer for another 45 minutes.
